Hi there! I’m Lauren, a full-time student pursuing a degree in Public Health Education. I’m passionate about veganism and healthy eating, and I want to teach the world how to use food as fuel to their bodies. I believe that a good relationship with food should start from birth, and that learning about food is a lifelong journey. To me, clean eating is about eating foods that give you energy and make you feel good, both inside and out.
I am incredibly goofy and random. I love to laugh at everything and anything, and I make a lot of corny jokes. I’ve watched A Very Potter Musical far too many times. I’m obsessed with all things Michael Bublé (he will be mine!). My favorite things to do in my spare time are cook super yummy vegan food, exercise (primarily running outdoors, ellipticalling, or circuit/weight training), shoot portraits, and read anything by Jodi Picoult. I can’t stand mushrooms, beets, or eggplant. I could eat bananas all day long and never get sick of them. When I grow up I want to live like the Golden Girls. One of my life goals is to run a marathon. I’ve been bitten by the tattoo bug – I have two and want more! I love going on adventures and I’ve been on quite a few in my lifetime. I’ve moved across the world (I was born in London, England and lived there until I was 4), traveled all the way to Alaska, and, most recently, lost 60 pounds.
For the most part, it was healthy weight loss. But, like a lot of other women, I fell into the trap of an eating disorder. I describe it in more detail on the “my journey” page. Nowadays I’m a completely different person. I’m happy, healthy, and I’m living life for my future, not day by day and meal by meal. Besides, there are better things to focus on in life… like Michael Bublé

Congrats! That’s a huge accomplishment…I lost a ton of weight last year, and finding a healthy and stable weight is definitely a challenge like you said, so I know how hard you worked! Love your blog:)

“Count your blessings, not your calories” is such a wonderful saying! I need to frame that!! And I love Jodi Picoult too, I’ve read all her books (multiple times) except for the new one (House Rules). And Michael Buble is awesome; he’s coming to Charlotte this summer!!

sure thing! public health really is a great major. basically, we’re all about education and prevention. but not those lame sex ed teachers in junior high.
i would love to work for any organization that works to prevent eating disorders and promotes healthy body image for both men and women. my dream job would be working for girls on the run. health educators work in many different settings, from hospitals to privately.
the classes i’m taking are still pretty basic. in my specific track, i’ve got classes on diseases, epidemiology, women’s health, community health, interventions, and eventually an internship during my final semester.
